Executive Chef
As Executive Chef at Britannic Explorer, a Belmond Train, you are part of a team responsible for creating an exceptional culinary experience on board. In this role, you will oversee and direct all aspects of kitchen operations to meet and exceed the high expectations of our guests and maintain the gastronomic reputation of our train. Primary Responsibilities Include:
- Creating and continually updating a gourmet menu that reflects the train’s food concept, focusing on innovative and visually appealing dishes using high-quality, seasonal ingredients.
- Overseeing and coordinating all kitchen operations, including food preparation, plating and presentation.
- Ensuring a smooth flow of service and maintaining a clean and organised kitchen.
- Leading, managing and motivating the kitchen team, including recruitment, training, scheduling and performance evaluations.
- Managing food costs to an approved budget, limiting waste and ensuring strict adherence to food safety regulations.
- Staying current with food and culinary trends, experimenting with new techniques and ingredients to keep the menus fresh and exciting.
Requirements
What You Bring:
- Applicants must have eligibility to work in the UK.
- 5-7 years’ proven experience as an Executive Chef in a fine dining restaurant or a similar upscale culinary environment.
- Culinary degree or equivalent training in culinary arts.
- Exceptional culinary and creative abilities and experience in creating, costing and maintaining recipes.
- Excellent problem-solving and organisational skills and ability to work in a high-pressure, fast-paced environment.
