Your purpose
● Lead the creation, testing and implementation of new dishes and menus - from concept to delivery.
● Research emerging culinary trends and incorporate them into menu development, with a focus on major events and seasonal offerings.
● Be aware of sustainability and be mindful when sourcing ingredients.
● Create and deliver presentations to communicate new ideas / projects clearly.
● Ensure consistency across all dishes by maintaining accurate recipes and providing training to the kitchen team.
● Create costings sheets for each dish with the use of Kitchen CUT.
● Ensure each dish has an updated allergens matrix.
● Manage tasks in a timely manner and ensure all deadlines are adhered to.
● Oversee the transition of new concepts from development phase to successful execution in service.
● Produce dishes to the highest standard, ensuring accuracy in garnishing, portioning and presentation.
● Maintain strict food hygiene and safety standards, including compliance with HACCP protocols.
● Prepare sufficient mise in place for each service and ensure correct storage and labelling of unused items.
● Manage stock effectively, ensuring food is kept in optimum condition and minimising waste.
● Communicate menu changes, shortages, or updates clearly and promptly to the Front of House team.
● Uphold exemplary standards of cleanliness and organisation across the kitchen.
● Deputise in the absence of a Senior Sous / Sous Chef when required, including leading service, managing the team and delivering training.
● Demonstrate versatility by covering all kitchen sections, setting high standards and acting as a role model.
● Guide and train the team where necessary.
● Place accurate and timely orders to ensure smooth operations.
