Senior Sous Chef
Company Description
We’re looking for a Senior Sous Chef to balance creativity with precision, help lead the kitchen team, turn ideas into dishes and keep the kitchen firing on all burners at The Hoxton, Edinburgh.
Reporting to the Executive Chef, you’ll be responsible for managing the day-to-day kitchen related activities, supporting with the management of all kitchen teams and back of house F&B spaces.
We’ve opened our doors in Edinburgh’s charming West End - our very first Hox in Scotland. Set across 11 beautiful Georgian townhouses, we’re home to 214 bedrooms, a lively open lobby and bar, an all-day Italian trattoria Patatino, a retro-inspired cinema, a flexible and super-size event space called The Get Together, and The Apartment – our unique signature spot for meetings, private dinners and memorable gatherings.
Patatino is our all-day Italian trattoria serving fresh pasta, wood-fired pizzas, and all the spritzes and Italian wines you could wish for. Inspired by the glam and romance of the sun-soaked Amalfi coast, it’s a spot for long, joyful meals with friends, where old-school charm meets modern design, with bold colours, cosy corners, and plenty of personality.

What you’ll do…
- Support the Executive Chef in leading a large, dynamic kitchen team.
- Step up and run the show when our Executive Chef is away, keeping the kitchen buzzing and standards sky-high.
- Lead from the front when it comes to people, giving thoughtful feedback through performance reviews and coaching, supporting development, championing growth, and building a team that keeps getting better.
- Help shape a kitchen culture that’s positive, collaborative, and genuinely enjoyable to be part of, where everyone feels supported and proud of what they do.
- Create, execute, and produce top-notch food with a constant eye on the highest quality standards, presentation, and flavour.
- Nurture and develop the talent of the kitchen team, creating an environment that brings out the best in them and where they can be themselves.
- Make sure things are running without a hitch, orders and deliveries are coming and going as needed, our service is smooth as chipotle butter, and our food hygiene standards are sky-high.
- Work with our Executive Chef on ideas and techniques that make our kitchen a creative, ever-changing environment where we’re always looking to make the best food out there.
- Ensure statutory compliance in all food and drink related areas.
- Think outside the box and drive standards, always striving to find efficient solutions whilst maintaining the quality and integrity of the menu.
- Both guest and team experience will be at the heart of all you do. You’ll lead your team by example, keeping them involved and motivated; helping them feel empowered and supported, confident in providing top Hox experiences for our guests and comfortable turning to you with questions.

- Proven track record managing large kitchen teams.
- A true passion for creativity whilst maintaining the integrity of our brand standards through the dishes on the menu.
