Our client is a contemporary yet historic 4 Star hotel in Central London, just a short walk from Covent Garden station and the Thames. The hotel has been refurbished to a modern and contemporary style, yet has a rich heritage dating back to the early 20 th Century.

The hotel has a bustling all-day dining restaurant, with a strong focus on quality British cuisine with international flair, and a popular afternoon tea trade. Breakfast is the busiest time of the day here, catering for up to 800 covers whilst lunch and dinner are not as busy. Afternoon teas are also a big hit here, particularly at weekends.

Please note that staff live in accommodation is not available with this role, therefore Head Chef’s should only apply if they are able to commute to central London on a daily basis.

What’s involved?

As the Head Chef of this 4-star hotel, you will lead and manage a team of 17 chefs, ensuring all food is cooked, prepared, and presented to company standards.

Reporting into the Director of F&B, you will have full autonomy over creating high-quality menus and the day-to-day running of the kitchen, including rota’s, offering continued training and development of your team, as well as the hiring of new staff.

You will create recipes and allergen information for all dishes ahead of them going ‘live’ on the menu, assist in the development of the hotel’s catering offering, budgets, and goals, build and maintain long-lasting relationships with key suppliers to ensure the purchasing of produce and equipment remains within budget. You will also be responsible for ordering stock, ensuring deliveries are checked thoroughly, maintaining records and due diligence, and ensuring the kitchen’s GP target is met through food costs, wastage, and portion control.

The ideal candidate will be an approachable and organised individual with a hotel background, as well as proven experience in managing a kitchen team.
